Suele consumirse durante los meses m\u00e1s fr\u00edos. Es una comida contundente, de las de anta\u00f1o. Nosotros, te proponemos hacerla con manitas de cerdo, pero tambi\u00e9n se puede hacer con bacalao.<\/p>\n\n\n\n<p>La opci\u00f3n con bacalao es perfecta para evitar consumir carne los d\u00edas de vigilia, durante Semana Santa.<\/p>\n\n\n\n<p><strong>Ingredientes<\/strong><\/p>\n\n\n\n<p>250 g de jud\u00edas blancas<\/p>\n\n\n\n<p>\u00bd kg de patatas<\/p>\n\n\n\n<p>250 g de jud\u00edas verdes<\/p>\n\n\n\n<p>3 manitas de cerdo<\/p>\n\n\n\n<p>2 huevos<\/p>\n\n\n\n<p>2 ajos<\/p>\n\n\n\n<p>Aceite de oliva virgen extra<\/p>\n\n\n\n<p>Sal<\/p>\n\n\n\n<p><strong>Elaboraci\u00f3n<\/strong><\/p>\n\n\n\n<p>Para preparar este ajoaceite, debemos poner, la noche anterior, las jud\u00edas blancas a remojo.<\/p>\n\n\n\n<p>Al d\u00eda siguiente, empezamos limpiando y troceando las jud\u00edas verdes. Escurrimos las blancas y las ponemos en una olla, junto con las verdes y las manitas de cerdo. A\u00f1adimos agua hasta que los ingredientes queden cubiertos y cocemos a fuego medio hasta que est\u00e9n todos los ingredientes pr\u00e1cticamente cocinados.<\/p>\n\n\n\n<p>Mientras se cuece, se pelan y trocean las patatas. Para ello, ponemos en un mortero los dientes de ajo y la patata que hemos sacado del guiso y lo machamos bien. Incorporamos, poco a poco, el aceite y vamos integrando todos los ingredientes con la ayuda de la mano del mortero. A\u00f1adimos la yema de huevo y machacamos bien. Reservamos. Tambi\u00e9n se puede hacer con batidora.<\/p>\n\n\n\n<p>A\u00f1adimos las claras de huevo a la olla para que se cuajen y removemos bien.<\/p>\n\n\n\n<p>Sacamos un vaso del caldo del guiso y cuando est\u00e9 fr\u00edo, lo mezclamos con el alioli.
